From Field to Fork: Advancing Nitrogen Footprint Approaches for Sustainable Food Systems. Research Seminar by Azusa Oita

We all eat every day, but we hardly ever stop to think about how our diet affects the environment. Nitrogen pollution is one of the main environmental problems worldwide. In this seminar, we explain what the nitrogen footprint is, an indicator that connects what we eat with reactive nitrogen losses throughout the supply chain, and we discuss how different models can be combined to address different aspects of the nitrogen problem.

Azusa Oita is a Senior Scientist at the National Agriculture and Food Research Organization (NARO), Japan, and a visiting researcher at the Leibniz Centre for Agricultural Landscape Research (ZALF), Germany. Her research focuses on nitrogen and phosphorus management by combining supply-chain nutrient flow analysis with footprint model development to support transitions to sustainable food systems. She has contributed to the development of nitrogen footprint models and related frameworks across multiple spatial and decision scales. Her work includes top-down, economic input–output-based modelling (e.g., global analyses that explicitly account for international trade, and supply-chain attribution of nitrogen losses across multiple origins), as well as bottom-up scenario modelling (e.g., diet scenarios with differentiated seafood categories and a harmonised framework to assess both nitrogen and phosphorus footprints). Her current interests centre on how such indicators can be used effectively in real-world nitrogen management actions and how they can support transitions towards more sustainable food systems.
